# Value-Add Processing

## Philosophy

The margin in tropical agriculture is in processing, not raw commodity sales. Hawaiian-grown vanilla and breadfruit command premium prices, especially when processed into shelf-stable, branded products. The goal is to capture as much of the value chain as possible on-farm.

## Vanilla Products

| Product | Description | Estimated Price Point |
|---|---|---|
| Cured whole beans | Grade A Bourbon-style cured beans | $20–40/bean retail |
| Vanilla extract | Single-origin Hawaiian pure extract | $30–60/4oz |
| Vanilla paste | Bean-flecked paste for baking | $25–50/4oz |
| Vanilla sugar | Infused cane sugar | $15–25/jar |
| Vanilla salt | Infused sea salt | $15–25/jar |

The curing process is the critical value-add step for vanilla — transforming green beans (~$20–50/lb) into cured beans ($200–600+/lb). This is a 6–9 month process involving killing, sweating, drying, and conditioning.

## Breadfruit Products

| Product | Description | Estimated Price Point |
|---|---|---|
| Breadfruit flour | Gluten-free, high-fiber flour | $15–25/lb |
| Breadfruit chips | Seasoned, kettle-style chips | $8–12/bag |
| Frozen breadfruit | Peeled, sliced, ready to cook | $10–15/lb |
| Fresh breadfruit | Whole fruit, local/regional | $5–10/fruit |

Breadfruit flour is the highest-margin processed product — shelf-stable, shippable, and tapping into the growing gluten-free market.

## Processing Facility

> TODO: Requirements for a small-scale processing kitchen/facility — permitting (Hawaii Dept of Health), equipment needs, estimated build-out cost.

## Brand and Market Positioning

> TODO: Brand concept, target markets (direct-to-consumer, chefs/restaurants, specialty retail), online presence.
